The laws that govern the use of the mountain label demand that the milk production, cheese making and aging be confined to a mountainous zone.

The milk producers and cheese houses at Fromageries Arnaud are located on the high plains of the Jura Mountain Range and clearly correspond with all the zoning regulations.

After ageing for a minimum of one year, the Juraflore de Montagne cheeses are sold only at their peak of maturity. As ageing is particularly important to the Juraflore de Montagne cheeses, it is the selection process that secures their reputation. The exceptional sensory faculties of our cellar keepers are the key to their judgment and expertise.
